Easy Eggplant 1 lg. eggplant, peeled & sliced
1 c. water
1 egg
Cracker crumbs
Cover and boil eggplant about 5 minutes. Drain well. Mash with potato masher. Stir in egg. Add cracker crumbs until can be made into cakes. Fry in lightly greased skillet until well browned. Serve at once. Easy Eggplant printer friendly version located here. Click Back to return. |
